You know, Elton John was wrong.  Saturdays weren’t made for fighting.  They were made for burgers.  Especially in the summer. 

But, serving the same burgers week after week can get a bit boring.  So, just as I’m always looking for new salads to try, I’m always wanting to try out new burger recipes, particularly if they’re turkey burgers.  Because, let’s face it, turkey burgers take bland to all new levels.  BUT, their blandness is actually their strong suit because they carry other flavors so well. 

In this case, those other flavors are inspired by Indian curries, with the inclusion of a chilli pepper, grated ginger and curry powder. 

Indian-Spiced Turkey Burgers

  • 1 lb ground turkey
  • 1 red chilli, seeded and minced
  • 1 clove garlic, microplaned
  • 2″ ginger, peeled and microplaned
  • 1 egg yolk
  • 2 tsp curry powder (hot or mild, depends on your tolerance)
  • lettuce, tomato, onion and mango chutney to serve

In a medium bowl, moosh all the ingredients together until completely incorporated.  Let sit for at least a half hour to let the flavors marry, then cook on a grill or in a pan.  Serve on a bun with lettuce, tomato and onion, then topped with a good tablespoon of mango chutney.
