The weird thing about late Easter is that you wind up with Lent starting one week and St. Patrick’s Day the next.   So, I’m treating the mister’s team to Guinness Chocolate cupcakes on Monday and making soda bread later in the week.  One of the things I miss this time of year is my mom’s corned beef – like everyone else, she would boil the beef to cook it, but then she’d finish it off in the oven with a mustard and brown sugar crust … corned beef sandwiches to die for, I’m tellin’ ya!

  • Sunday:  Leek and potato soup with roast turkey sammiches
  • Monday:  Soy Chilli Chicken, rice and bok choy
  • Tuesday:  Lamb tagine
  • Wednesday:  Leftovers
  • Thursday:  Spaghetti and meatballs
  • Friday:  Fish and chips
